About
White pepper grits are coarsely ground particles of white pepper — the dried, fully ripe berries of Piper nigrum L. from which the outer pericarp has been removed prior to drying and milling. They are used as a seasoning and flavouring agent to impart the characteristic pungency of piperine with a slightly earthier, less complex flavour profile than black pepper.
Safety summary
White pepper grits are broadly recognised as safe at culinary intake levels; piperine, the principal active alkaloid, has an estimated dietary exposure well within safe margins of exposure at normal seasoning use. No ADI has been established for white pepper as a spice, as it is classified GRAS. High-dose isolated piperine (as in supplements) may interact with drug metabolism and has shown reproductive/embryotoxic effects in animals, but these concerns do not apply to typical food use.
Regulatory landscape
| Jurisdiction | Status | Note |
|---|---|---|
| EFSA (European Food Safety Authority) (European Union) | Approved | White pepper as a food spice/seasoning is permitted without restriction under EU food law. No E-number assigned; no maximum level established for use as a spice. Isolated piperine in food supplements is subject to separate scrutiny.source |
| FSSAI (Food Safety and Standards Authority of India) (India) | Approved | White pepper (Piper nigrum L.) is a recognised spice under FSSAI Food Safety and Standards (Food Products Standards and Food Additives) Regulations, Chapter 2.9. Quality parameters include moisture, volatile oil, ash, crude fibre, and piperine content. Label must declare product name as 'White Pepper'.source |
| JECFA (JECFA (FAO/WHO)) | Approved | Covered under CXS 326-2017 Standard for Black, White and Green Peppers. White pepper defined as obtained from dried berries of Piper nigrum L. after removing the pericarp. Chemical and physical quality characteristics (volatile oil, ash, moisture, crude fibre) are specified; products must comply with Codex general standard for contaminants (CXS 193-1995) and applicable pesticide MRLs.source |
| FDA (Food and Drug Administration) (United States) | Approved | Listed as GRAS under 21 CFR 182.10 as a spice, seasoning, and flavouring. FDA CPG Sec 525.750 formally defines white pepper as the dried, mature berries of Piper nigrum L. with outer covering removed; no maximum use level set. |
