Sodium aluminium phosphate (acidic) is an inorganic salt used primarily as a leavening agent and acidulant in baked goods such as cakes, muffins, and biscuits, where it reacts with sodium bicarbonate to produce carbon dioxide and achieve rise. It is also used as an emulsifying salt in processed cheese.
Safety summary
EFSA concluded E541 is of no safety concern at currently authorised use levels, as exposure from food additives is estimated to be near zero. Aluminium compounds have low bioavailability and low acute toxicity, and there is no concern with respect to genotoxicity or carcinogenicity. However, aluminium carries a recognised neurotoxicity concern, particularly for the developing nervous system, and a group TWI of 1 mg Al/kg bw per week applies across all aluminium-containing food additives combined.
