Pulav rice refers to milled (polished) white rice — typically a long-grain or basmati variety of Oryza sativa — used as the primary grain ingredient in the South Asian dish pulao/pulav. The outer bran and germ are removed during milling, leaving a starchy endosperm that is the main source of dietary carbohydrates and moderate protein.
Safety summary
Milled white rice is broadly safe for healthy adults and is a global dietary staple; however, it has a high glycemic index (mean GI ~64) and regular high intake has been associated with increased risk of type 2 diabetes in prospective cohort studies. White rice naturally contains lower inorganic arsenic levels than brown rice because polishing removes the bran layer where arsenic concentrates; nonetheless, rice is a recognised dietary source of arsenic and long-term high exposure has been linked to cardiovascular disease, diabetes, and certain cancers. No ADI is established as it is a whole food, not a food additive.
