About
Potato (Solanum tuberosum) is an edible tuber of the Solanaceae (nightshade) family and one of the world's most widely consumed staple foods. It is used as a whole food and processed ingredient, providing carbohydrates, potassium, vitamin C, and dietary fibre.
Safety summary
Potatoes are broadly safe for most populations when cooked and prepared correctly. They naturally contain glycoalkaloids (α-solanine and α-chaconine) that can cause acute gastrointestinal symptoms—nausea, vomiting, and diarrhoea—at high doses, especially from green, damaged, or sprouted tubers. EFSA (2020) identified a specific health concern for infants and toddlers from mean glycoalkaloid exposure; the high potassium content also warrants caution in individuals with kidney disease.
