About
Potassium propionate is the potassium salt of propionic acid, used as an antimicrobial food preservative to inhibit mould and bacterial growth. It is found naturally in some fermented foods and is widely used in bakery products, cheese, and processed foods to extend shelf life.
Safety summary
JECFA established a group ADI of 'not limited' for propionic acid and its calcium, potassium, and sodium salts, maintained since 1973 and reaffirmed in 1997. EFSA's 2014 re-evaluation found no safety concerns for consumers at authorised use levels, noting that forestomach hyperplasia seen in rodent studies is not relevant to humans. The available toxicological database did not permit formal ADI allocation, but exposure at authorised levels remains well below concentrations associated with site-of-contact irritation.
