About
Polysorbate 80 is a synthetic nonionic surfactant and emulsifier derived from sorbitol and oleic acid, widely used in baked goods, ice cream, confectionery, and sauces to improve texture, prevent fat separation, and stabilise emulsions. It is also used as a defoaming agent and solubiliser in various processed foods.
Safety summary
EFSA re-evaluated polysorbates in 2015 and established a group ADI of 25 mg/kg bw/day for E432–E436, but noted that estimated toddler exposure (24.5 mg/kg bw/day) is very close to this limit. Emerging in vitro, animal, and human tissue studies suggest that even low dietary concentrations of polysorbate 80 may promote bacterial translocation across the intestinal epithelium and contribute to intestinal inflammation and metabolic syndrome. Hypersensitivity reactions, including anaphylactoid shock, have been documented, primarily with parenteral exposure but also flagged for sensitive individuals consuming it orally.
