Nature-identical food flavourings are chemically synthesised substances whose molecular structure is identical to flavouring compounds found naturally in food or plant material, produced by chemical synthesis rather than extraction. They are used to impart, modify, or enhance flavour in processed foods, offering batch consistency and cost advantages over direct natural extraction.
Safety summary
Nature-identical flavourings are broadly considered safe for the general adult population at Good Manufacturing Practice (GMP) levels; individual constituent substances are assessed by EFSA, JECFA, and FEMA using the Threshold of Toxicological Concern (TTC) and conventional toxicological methods. Regulatory bodies including the EU and Codex have formally stated there is no toxicological basis for distinguishing safety between a nature-identical compound and its naturally occurring counterpart. No category-wide ADI is established; each individual flavouring substance requires separate risk assessment.
