Nature-identical coffee flavour is a chemically synthesised or isolated blend of aromatic compounds (such as 2-furfurylthiol, furans, pyrazines, and ketones) that are chemically identical to molecules found in roasted coffee. It is used to impart or reinforce coffee taste and aroma in food and beverage products without requiring actual coffee extract.

The constituent molecules of nature-identical coffee flavour are evaluated individually for genotoxicity, metabolism, and toxicity by bodies such as EFSA and JECFA using a stepwise threshold-of-concern approach; no ADI has been established for the flavour blend as a whole, as it is used at very low levels following the quantum satis principle.
