About
Lecithin is a complex mixture of phospholipids — primarily phosphatidylcholine, phosphatidylethanolamine, phosphatidylinositol, and phosphatidylserine — obtained commercially from soybeans, eggs, sunflower seeds, and rapeseed. It is widely used in food manufacturing as an emulsifier and stabiliser to blend water- and fat-based ingredients, improve texture, and extend shelf life.
Safety summary
EFSA re-evaluated lecithins (E322) in 2017 and concluded no numerical Acceptable Daily Intake (ADI) is required, reflecting a broad safety consensus at typical food-additive use levels; a 2020 follow-up opinion confirmed safety in infant formula up to maximum permitted levels. The FDA classifies lecithin as GRAS under 21 CFR 184.1400. The primary safety consideration is allergenicity: lecithins derived from soybeans and eggs must be declared as allergens on EU food labels under Regulation (EC) No 1169/2011.
Regulatory landscape
| Jurisdiction | Status | Note |
|---|---|---|
| EFSA (European Food Safety Authority) (European Union) | Approved | Authorised under Annex II and III of Regulation (EC) No 1333/2008; purity criteria defined in Commission Regulation (EU) No 231/2012; no numerical ADI established (EFSA 2017 re-evaluation); soy- and egg-derived lecithin must be labelled as allergens per Regulation (EC) No 1169/2011; infant-formula use (FC 13.1.1 and 13.1.5.1) confirmed safe up to maximum permitted level in 2020 follow-up opinionsource |
| FSSAI (Food Safety and Standards Authority of India) (India) | Approved | Approved as INS 322 emulsifier at GMP for general foods; maximum 0.5 g/100 ml in all types of infant formula; maximum 1500 mg/100 g in certain processed food categories; also permitted as processing aid (INS 322(i)) at GMP for all foods under FSSAI 2024 directivesource |
| FDA (Food and Drug Administration) (United States) | Approved | Listed as GRAS under 21 CFR 184.1400 for use as emulsifier, stabiliser, and flavouring adjuvant in food at levels not exceeding good manufacturing practice; canola-derived lecithin separately affirmed GRAS (GRN 000682)source |
