About
Lactic acid is a naturally occurring organic acid produced primarily by microbial fermentation of carbohydrates; it is widely used in food manufacturing as an acidity regulator, mild preservative, and flavouring agent in dairy products, beverages, dressings, pickled goods, and baked goods.
Safety summary
JECFA established an ADI of 'not limited' for lactic acid (L-, D- and DL- forms) in 1974, supported by the EU Scientific Committee on Food in 1991, reflecting its long history of safe use as a normal endogenous human metabolite. No adverse effects have been identified at food-use levels in the general population, and the FDA has affirmed it as GRAS. Premature infants and neonates under 12 weeks have limited capacity to metabolise the D(-)-isomer, warranting particular caution for that subgroup.
Regulatory landscape
| Jurisdiction | Status | Note |
|---|---|---|
| EFSA (European Food Safety Authority) (European Union) | Approved | Authorised as acidity regulator (E270) in Annex II and III to Regulation (EC) No 1333/2008; ADI 'not limited' per JECFA 1974, endorsed by EU SCF 1991; quantum satis (GMP) limits apply across most food categories.source |
| FSSAI (Food Safety and Standards Authority of India) (India) | Approved | Listed as INS 270 (Lactic acid, L-, D- and DL-) and classified as an acidity regulator; permitted at GMP levels across multiple food categories under FSSAI Food Products Standards and Food Additives Regulations, 2011 (Appendix C, Version 1, 01.09.2023).source |
| FDA (Food and Drug Administration) (United States) | Approved | GRAS-affirmed under 21 CFR 184.1061; permitted as a multipurpose food ingredient at Good Manufacturing Practice (GMP) levels.source |
