About
Dark chocolate paste (also called cocoa mass or chocolate liquor) is the pure, ground product of roasted cacao (Theobroma cacao L.) beans with no added sugar, consisting of cocoa solids and cocoa butter in roughly equal parts. It is used as a base ingredient in confectionery manufacturing to impart rich chocolate flavour and provide the fat matrix for moulded or enrobed products.
Safety summary
Dark chocolate paste is generally recognised as safe for healthy adults; its primary bioactive compounds — flavanols (epicatechin, catechin, procyanidins), methylxanthines (caffeine and theobromine), and cocoa butter — are well tolerated at typical dietary intakes. A safety concern specific to cocoa-derived products is the natural accumulation of cadmium from soil; dark chocolate carries higher cadmium levels than milk chocolate due to its greater cocoa-solid content, and EFSA has set a provisional tolerable weekly intake (PTWI) for cadmium. There is no established Acceptable Daily Intake (ADI) for dark chocolate paste as a whole food ingredient, as it is not classified as a food additive.
