About
Calcium propionate is the calcium salt of propionic acid, a short-chain fatty acid that occurs naturally in some foods such as Swiss cheese. It is widely used as an antimicrobial preservative in bread, other baked goods, dairy products, and processed foods to inhibit mould and bacterial growth and extend shelf life.
Safety summary
EFSA's 2014 re-evaluation found no safety concern at authorised use levels; JECFA had previously allocated an ADI 'not limited', indicating a high safety margin. The EFSA ANS Panel confirmed there is no concern with respect to genotoxicity or carcinogenicity. Some limited observational reports suggest a possible association between high propionate intake and behavioural changes in children, but this has not been confirmed in controlled studies.
